What’s sweeter than creme brulee?

Keto creme brulee?

Well not technically, but when you see that you can enjoy something this delicious for this few new net carbs it will seem like the sweetest thing in the world. You don’t technically need a blow torch–your broil setting on your oven should do just fine–but it’s more fun with the torch.

Method

Steps:

    • 1 Preheat your oven to 300°F.
    • 2 Start by heating your heavy cream on a low flame and add 1/4 cup of erythritol. Stir until it’s dissolved.
    • 3 Add in a teaspoon of vanilla extract and wait until the mixture comes just to a simmer. Take it off the heat while you continue with step 3.
    • 4Separate 3 eggs and beat the yolks until they’re lighter in color. Add a pinch of salt now as well.
    • 5Slowly pour in a bit of your hot heavy cream mixture while whisking the egg yolks. This will temper the eggs so they don’t scramble. Pour in the rest of your heavy cream slowly, whisking continuously.
    • 6Place 4 ramekins in a deep baking dish and pour a fourth of the crème brulee mixture into each.
    • 7Then take hot water and fill up the baking dish halfway up the sides of the ramekins. Do not get any water into the ramekins.
    • 8Bake for about 35 minutes. The tops should be set, but jiggly.
    • 9Let them cool and refrigerate overnight, or as long as possible. The longer the better!
    • 10When you’re ready to serve them, sprinkle the tops generously with erythritol.Note: it must be pure erythritol, not an erythritol/stevia/anything blend.
  • 11Use a kitchen torch to gently burn the tops of the crème brulees. If you don’t have a kitchen torch, simply place the ramekins on a baking sheet and stick them into the oven close to the broiler for a few seconds. Check on them frequently and rotate if necessary.
  • 12Let each one cool off a bit so the caramelized erythritol solidifies and enjoy!

  2. I made these but they didn’t set, they were still runny after 24 hours in the fridge. I used Xylitol instead of Erythritol. Why do you think they didn’t set?

    1. I don’t think it was because of the xylitol. Perhaps they were under baked or even under mixed/whisked? The base should still be creamy, not like a cake, more like a soft custard. The broiler adds a layer of crispiness on top, but the insides should still be creamy.

  3. Mine end up taking 45-60 min in a convection to get good consistency. I love these though, creme brulee is one of my favorite desserts so to be able to make these is a great treat.

  4. Made these yesterday, they’re amazing. I didn’t think they were going to set, but this morning I had the smoothest creamiest creme brûlée in the fridge!
