Summertime puts us in the mood for tropical flavors, cool treats, and fun in the sun. For the perfect summer treat, we turned our Keto piña colada into a popsicle that the whole family can enjoy. It’s easy to whip up and even easier to devour!

Method

Steps:

  1. Mix all ingredients in a blender until combined and smooth.
  2. Pour mixture into popsicle molds and insert popsicle sticks.
  3. Place molds in freezer and allow to freeze completely (roughly 6 hours).
  4. Enjoy!

¼ cup of canned unsweetened coconut cream 

¾  cup of sugar-free pineapple syrup

1 Tbsp granulated erythritol (or other sugar-free sweetener)

Bonus tip: If you’re looking to kick up this recipe for an adult crowd, add two ounces of your favorite rum to the mix!
