Simply Delish Mason Jar Rocky Road Pudding

We think that chocolate is practically the official food of February, so why not celebrate with a decadent dessert? The Simply Delish instant chocolate pudding is so delicious, we often eat it straight out of the bowl! But in case you want to get a little fancy, we used it to inspire these fun Rocky Road Pudding jars. They’re quick to make and even quicker to devour! Enjoy!


  1. Prepare pudding mix with milk as directed on box
  2. Chill pudding in fridge while preparing marshmallow 
  3. Add allulose, erythritol and water to sauce pan
  4. Stir together and heat until it reaches 230 degrees
  5. While saucepan is heating up, add egg white to the bowl of a stand mixer and whip at high speed until it reaches soft peaks
  6. Pour gelatin powder over 2 ½ Tbsp water 
  7. Once at 230 degrees, remove sweetener mixture from stove and stir in gelatin mixture
  8. With mixer at medium speed, slowly pour the sweetener mixture into egg white until fully combined
  9. Turn mixer up to medium high speed and let mix until it reaches a thick, glossy, and creamy texture (will take several minutes)
  10. Start filling mason jars by adding a layer of chopped pecans in each jar
  11. Add pudding on top of pecans and then add a layer of marshmallow
  12. Repeat each layer 
  13. Top with whipped cream, more pecans, and chocolate chips
  14. Serve immediately or chill until ready to eat

1 ¼ cup Keto friendly milk (we used macadamia nut milk)

¼ cup + 2 Tbsp allulose

½ cup erythritol

1/4 cup water

1 egg white

2 Envelopes (14.5 grams) Gelatin (added to 2 ½ Tbsp water)

Sugar-free White Chocolate Chips

Sugar-free Dark Chocolate Chips

Pecans, chopped

Whipped Cream
