Spotlight: Keto and Co.
Ted Tieken is the founder of Keto and Co., one of the most exciting companies in the world of keto baking mixes and products! After personally experiencing amazing benefits from his own keto journey, Ted set out to create a company that would help others on their path. Read on to see how Ted made his keto business dream a reality!
What made you decide to start Keto?
I came down with a chronic pain condition in 2008 that forced me to leave my first career. In June 2014, I started keto and within 4 days, not only was my pain cut by half, but also my brain got sharper. That’s an outcome that just doesn’t happen in pain management. I also dropped 35 pounds in the first 7 months and I’ve kept most of that off for 6 years.
What are your favorite parts of living a keto life?
Reduction in constant pain is definitely #1, and why I’ll likely be keto for the rest of my life. Second is the fact that I can work all day without having to stop to eat. I used to get engrossed in work and skip lunch when I ate carbs, and I would get a terrible blood sugar crash around 3 pm. The ability to go without eating until dinner is very convenient.
What prompted the start of Keto and Co?
In late 2014, able to move through the world again, I was looking for what to do next with my life. I looked at the results people were having with keto for managing chronic conditions and weight loss and I thought, “Hey if this was easier, this Keto thing could really do some good in the world.” I think the best businesses are the ones trying to solve society-level problems, and the obesity epidemic is one of the biggest problems facing modern society.
What have been your biggest challenges operating a business in the keto space?
Running a food business, in general, is hard. So running a truly keto food business is even harder. Our rigorous standards for both taste and nutrition can make it difficult to find ingredients to work with. I’m very lucky that I have a great staff who are all passionate about making the world a better place through better food and are able to help solve these problems with me.
What is your favorite Keto and Co. product?
Peanut Butter Crunch Granola. My favorite product changes pretty often. We frequently release products that give me the “wow, I didn’t realize how much I missed this” experience. So whatever we’ve released most recently that replicates something I haven’t been able to eat in the last 6 years is usually my favorite.
Where do you see the keto food industry going in the future?
I think we are in the 3rd inning for keto food. We are seeing restaurants like Chipotle put “keto options” on their menu. I think a lot of restaurants are going to follow. I’m looking forward to the day when every chain restaurant and fine dining restaurants have “keto” options next to “vegan” and “gluten-free.” Grocery stores have figured out that they have to have keto options and they’re enthusiastically putting keto products on shelves. I think we’re going to see the trend towards more keto options for the next two or four years. At least, I hope we are as a keto business owner and a keto-for-life dieter.
Ted’s keto baking tips!
- A tiny bit of xanthan gum fixes 80% of your problems, but too much xanthan gum creates its own problems.
- Don’t try to whip anything by hand. My $40 Cuisinart immersion blender is the hero of my kitchen.
- Always keep eggs and butter in your refrigerator!
