Keto Loaded Cauliflower Casserole
It's the season for family BBQs, pool parties, and picnics! But no need to throw in the towel on your healthy eating. We proclaim this — the summer of Keto! This loaded cauliflower casserole is the perfect side dish to accompany all those bunless burgers and steaks off the grill. And we bet your carb-loving friends won’t even realize it’s potato-less! So get cooking and let’s bring on the summer fun!
Directions:
- Preheat oven to 350°
- Cut cauliflower into florets and add to boiling water
- Cook cauliflower until soft, about 10-12 minutes
- Drain cauliflower and cut into bite sized pieces
- While cauliflower is cooking, slice bacon into bite sized pieces and saute in a pan until cooked through. Set aside
- Mix cauliflower, sour cream, salt, pepper, 1 cup of cheese, and half of the green onions together in a large bowl
- Transfer mixture to 8x11 casserole dish
- Top with remaining cheese, green onions, and bacon
- Bake at 350° for 15 minutes, or until cheese is melted
