    March 14th is National Pi Day, and you know we’re going to celebrate! And what could be better than a sweet and light strawberry cream pie as we get ready to head into spring? This recipe is deceptively easy to make, but it’s sure to wow whoever tastes it. Perfect for a spring potluck or a family picnic, it will make you and your guests berry happy!

    Crust Directions:

    1. Preheat oven to 350
    2. Grease 8 inch pie pan with oil
    3. Mix all crust ingredients in a medium bowl until dough forms
    4. Transfer dough into pie pan and press into bottom and sides using your hands or a spoon (oil hands or spoon to prevent sticking)
    5. Use a fork to poke holes in bottom of crust to prevent air bubbles
    6. Bake for 10-12 minutes, until edges are starting to turn golden brown
    7. Let crust cool while you prepare filling

    Filling Directions:

    1. Pour unflavored gelatin in to a small bowl
    2. Heat water in microwave to simmering and pour over gelatin
    3. Whisk together until mixture is fully combined
    4. Combine softened cream cheese and erythritol in bowl of a stand mixer
    5. Beat on medium high until combined and whipped
    6. Add in lemon juice and strawberry gelatin powder and beat until combined
    7. While mixer is running, pour in heavy cream, macadamia nut milk, and gelatin mixture
    8. Beat at high speed until combined and texture is thick and whipped
    9. Spoon mixture into pie crust and spread evenly
    10. Let set in refrigerator overnight, or for at least 6 hours

    Whipped Cream Directions:

    1. Pour heavy cream and powdered erythritol into bowl of a stand mixer
    2. Whip at high speed until cream reaches stiff peaks
    3. Spread evenly over top of chilled pie
    4. Garnish with strawberries as desired
