We couldn’t let this month go by without creating a fun and festive dessert! St. Patrick’s Day is usually associated with drinking, but we think the holiday deserves a celebratory dessert, too. Enter these delicious lime bars! This is the perfect fresh and bright dessert for spring. And it’s so easy to make, you’ll think you’ve found a pot of (recipe) gold! So go ahead and have one with your pint (we won’t judge!)
Directions:
Crust:- Line an 8x8 pan with parchment paper and spray with oil to grease
- Mix all crust ingredients in a medium bowl until dough forms
- Transfer crust to prepared pan and press down on bottom of pan with a spoon or your hands
- Bake at 350 degrees for 10-12 minutes, or until golden brown
Filling:
- While crust is baking, add all filling ingredients to medium bowl and whisk until fully combined
- Pour into baked crust and bake at 350 degrees for 20-22 minutes, until mostly set (will still be slightly jiggly in the center)
- Allow to cool in pan completely on a wire rack
- Once cooled, lift out of pan with parchment paper and cut
- Store in fridge
