Whether your Valentine’s Day plans consist of a romantic date night, a self-care pampering session, or a Galentine’s celebration, dessert should be on the menu! So we’ve created these decadent red velvet cupcakes. Easy to throw together, quick to bake, and fun to decorate! These are the perfect sweet ending to your night.
Cupcake Directions:
- Cream together erythritol and butter at medium high speed with a stand mixer until fluffy
- Gradually add in eggs while continuing to mix
- Add in vanilla extract and mix until fully combined
- In a separate bowl, combine almond flour, xanthan gum, baking powder, baking soda, salt, and cocoa powder
- With mixer at medium speed, gradually add in dry ingredients until fully combined
- Add in red food coloring and mix till combined
- Add in vinegar and mix till combined
- Divide batter into cupcake liners and bake at 350 degrees for 18-20 minutes, or until toothpick inserted into the center comes out clean
- Let cool completely on a cooling rack
Icing Directions:
- Mix butter and cream cheese at medium high speed with a stand mixer until fluffy
- Add in powdered erythritol and vanilla extract
- Mix at high speed until fully combined and smooth
- Pipe icing on to cooled cupcakes
- Top with sugar free sprinkles or sugar free chocolates if desired
